Establishment of fat acids composition of the dried sheets stevia (Stevia rebaudiana Bertonі)

Abstract The thesis being presented is a devoted research of content lipid in the sheets of stevia and their estimation after world criteriy. Grounded, that viskiy content of lipid and fat acids in the sheets of stevia is inherent for stevia of Ukraine grown in agroclimatic terms. Possibility of application of index of content of lipid is rotined as an identification marker from determination of country-producer. In the sheets of stevia (Stevia rebaudiana Bertoni) content is identified 18 fat acids which content of palmitic prevails (С16:0), olein (С18:1), linolic (С18:2) and linolenic (С18:3). Content of fat acids in the sheets stevia C16 and C18 of row is 90,49 % from the general amount of fat acids. In-process grounded connection between content of the unsaturated the fats acids of lipid membranes and firmness of sheets stevia to the action of low temperatures after high maintenance in the sheets of dienovikh and tridienovikh of fat acids. Is it set that the sheets stevia have in composition correlation ω-6:ω-3 polinensachenikh of fat acids as 2:1, that exceeds correlation of fat acids in a sunflower, vine, corn and llyaniy butters. It testifies to perspective of the use of sheets stevia as sources of fat acids, which are needed for the normal functioning of organism of man.
